Our Story
Welcome To Chez Max
Gonzague ‘Max’ de Laloubie, the founder of Chez Max, arrived in Dublin in 2000, with a plan to improve his English.
Starting as a kitchen porter, waiter, manager; three years later, having fell under the charm of the island and especially the city of Dublin, he opened a small Juice bar in 2003.
The Origins of Chez Max
In 2005, he opened his first official Chez Max in Palace Street to provide a authentic french bistro experience in Dublin, the first of its kind. Offering a truly French experience, with music, food and french staff.
In 2008, he opened Baggot street restaurant; following in 2010 with Chez Max Café on Baggot street.
In 2010, he opened a guest house in Morocco.

In 2018, Max opened his cafe in Alliance Française on Kildare Street, with a french of freshly made food and epicerie.
